Tasting Notes

This deep garnet-coloured red wine boasts minty aromas, as well as hints of prune, tobacco and sweet spices. In the mouth you will notice that it is quite potent though balanced and develops with a lovely lavender note that closes in a mildly-flavoured finish characterised by a nice blend of tannins.

Pairing

This wine is quite bold and expressive and therefore pairs well with elegant meat dishes. Any Italian sommelier would suggest you try it with maltagliati pasta with cherry tomatoes and Italian cacioricotta cheese.

Puglia Primitivo Rosso IGT “Capotesta” 2010 - Cantine Paradiso: Why we like it

Cantine Paradiso’s “Capotesta” Puglia Primitivo IGT is produced using grapes that are harvested during the last week of August from vineyards cultivated using the “alberello” or sapling technique, located in the town of Manduria, Apulia, and grown on clay and limestone-rich soil that yields approximately 7000 kilos per hectare. In the cellar, the grapes are first lightly pressed and then left to macerate in temperature-controlled steel vats for 15 to 20 days. The wine that is yielded after a second pressing of the grapes is then left to rest in steel tanks for an additional two months before being transferred to French oak barrels to age for one year. Before being put on the market, the wine is first retransferred in the steel tanks for another three months, and then once bottled, rests for 4 months. The result is a wine that captures the particularities and essence of Mandurian wine country, considered by many to be the king of Primitivo wines.
