Samuel Billaud
Samuel Billaud, after having worked for 20 years as a winemaker and oenologist on the family estate, founded his own company in 2010. The setting of this story is Burgundy, in the Chablis region. Therefore, Samuel's vineyards, bred according to the dictates of organic farming, grow on those soils that are so typical: those made up of marls from the Kimmeridgien. Currently, Samuel manages several hectares of vineyards, divided into the appellations of Petit Chablis, Chablis, Chablis 1er Cru and Chablis Grand Cru. The average age of the vines is about 30 years, the vinification is carried out in small steel tanks and in 450/600 liter tonneau. For the Premier and Grand Crus a 12-month refinement takes place in wood, 15% of which is new. Since he started selling Chablis with his own label, Samuel’s enjoyed great success and his bottles are now sought after all over the world, both by enthusiasts and professionals. Samuel Billaud's range of Chablis wines relies on refined wines, with intense and articulated aromatic profiles, they’re structured, with a strong personality and clear substance; these are top quality Chablis, which every Burgundy white wine lover should definitely try. The production, to date, is around 50 thousand bottles per year and among these at the very least Chablis Grand Cru "Vaudésir" and the Chablis Grand Cru "Valmur" deserve a mention. Sumptuous, with beautiful acidity, saline and masterful depth, Samuel Billaud's Chablis Grand Cru "Vaudésir" is a wine of great expressiveness; it ages in wood for three years, and is wonderfully balanced and clearly a first class white. The Chablis Grand Cru "Valmur", on the other hand, supported by a good flavour and a decidedly elegant structure, is a taut and vibrant white, which ensures an incomparable taste, certainly worthy of the native terroir.
