DOMAINE CARÊME
Domaine Carême is a small French producer located in Vouvray, a commune in the Loire Valley. We are in a wine-growing region that is particularly renowned for the production of white wines and, given its size, has a variety of microclimates that are ideal for creating wines with substantially different styles on the palate.
In Vouvray in particular, one grape variety stands out above all others: Chenin Blanc. Among the various producers in the area who delight in making this wine, Domaine Carême stands out, headed by Vincent, a young man who represents the new style of wines created here, once identified as low-quality products to be sold at low prices, mainly on the export market.
Since the beginning of his winemaking adventure, Vincent has felt a strong connection to the rural world of wine, where a natural approach is essential to honour the terroir of origin. For this reason, the winery is certified organic, completing a journey that aims to protect the environment and nature surrounding the vineyards.
Among the rows of vines, which cover an area of 14 hectares, the only grape variety grown is, of course, Chenin Blanc, which, thanks to the rather cold temperatures, has an interesting level of acidity, the secrets of which have been handed down in this area from generation to generation.
Every year, around 60,000 bottles leave the walls of Domaine Carême, divided into just under ten labels. alongside still white wines such as Sec and Le Clos, the pétillants are also worth a taste, namely the Metodo Champenoise Brut – perfect for the most refined aperitifs – and the Metodo Ancestrale, which, in the 2015 vintage, is pleasant and seductive to say the least, and truly interesting.
