As early as the beginning of the 20th century, Apulia, and in particular Salento, was producing rosé wines with great personality, long before this style of winemaking became trendy. Today, alongside historic producers such as Leone de' Castris with its iconic Five Roses (the first rosé bottled in Italy in 1943), there are innovative wineries that have reinterpreted this tradition, offering modern, fresh rosés with an unmistakably Mediterranean character.
The beating heart of Apulian rosés is represented by the native Negroamaro and Primitivo grape varieties, which give these wines a distinctive and immediately recognizable character. Negroamaro, with its balance between sweetness and bitterness, produces rosé wines of extraordinary elegance, characterized by notes of pomegranate, cherry, and a delicate Mediterranean spiciness. Primitivo, on the other hand, gives greater structure and fruity intensity, with hints of ripe strawberries and wild berries. Rosé vinification, traditionally obtained through brief maceration on the skins, enhances the freshness and minerality of these grape varieties, balancing their natural power with a pleasant drinkability that makes them perfect for the Mediterranean climate.
Apulian rosés are distinguished by a more sustained body than other styles of rosé, a characteristic that makes them extraordinarily versatile in food pairings. Their more pronounced structure and typically Mediterranean flavor make them the perfect accompaniment to traditional Apulian dishes, from raw seafood to seafood first courses such as orecchiette with mussels, to more elaborate fish-based dishes. No less interesting are the pairings with white meats, fresh cheeses, and delicate cured meats. The ideal serving temperature is between 10° and 12°C, slightly higher than other rosés, to fully appreciate their aromatic bouquet and complex flavors that reflect the intensity of the sun and the scents of the Apulian Mediterranean scrub.
